« Quick caramelised onion soup with garlic and parsley toasts »

Warm up with a bowl full of this after a long, wintry walk

Ingredients:

  • 1 x 200g Very Lazy Caramelised Red Onions
  • 2 sachets/2 teaspoons Very Lazy Garlic paste
  • 250ml golden beer
  • 600ml good quality hot chicken or vegetable stock
  • 50g butter, softenend
  • 1 tbsp chopped flat-leafed parsley
  • 8 slices French bread, cut diagonally

Method:

  1. Empty the jar of onions into a large saucepan. Stire in one sachet of Very Lazy Garlic paste (or 1 teaspoonful of paste) with the beer. Bring to the boil and allow to bubble for a minute or so.
    Gradually stir in the stock until well mixed. Heat gently until warmed through.
  2. Meanwhile, mix the butter with the remaining Very Lazy Garlic Paste and the parsley. Season well.
  3. Toast the slices of baguetter and spred withthe butter while still warm.
  4. Pour the hot soup into four warmed bowls and serve immediately with the garlic and parsley toasts as a Pretty Lazy snack or starter.

Tasting notes: the beer helps to blance the sweetness and acidity given by the Very Lazy Caramelised Red Onions. Bubbling it drives off the alcohol. More onions could be added but this soup is intended to be very quick and easy.  You can afford to be generous with the garlic paste.  Using 2 sachets manes the soup and toasts can be made as independent recipes.
