« Rosemary and garlic marinated lamb chops with garlic mash »
A extremely tasty evening meal.
Serves: 4
Preparation Time: 20 minutes, plus 2 hours marinating
Cooking Time: 40 minutes
Per serving: 629 kcals, 40.9g fat, 18.9 g sat fat
Ingredients:
- 1 tbsp olive oil
- 2 tbsp Very Lazy garlic paste
- 2-3 tbsp freshly chopped rosemary
- 1 tsp English mustard
- grated zest and juice of 1 lime
- freshly ground black pepper
- 8 small lamb chops
- 500g potatoes
- 150 ml milk
- 25g butter
- pinch of nutmeg
Method:
- Blend together the oil, 1 tbsp garlic paste, rosemary, mustard, lime zest and juice, seasoning to taste.
- Arrange the chops in a dish and coat with the marinade. Cover and leave to marinate in the refrigerator for 2 hours, turning occasionally.
- Meanwhile, make the mash. Peel potatoes and cut into pieces. Bring to the boil in water and cook for 15-20 minutes or until potates are tender. Drain.
- Heat milk in a small saucepan. Add the remaining garlic paste to the potatoes and mash with the butter, hot milk, nutmeg and season with black pepper.
- Grill the lamb chops for 5 minutes each side or until cooked to your liking, brushing occasionally with the marinade.
Serve the lamb with a selection of vegetables alongside the garlic mash.
