« Red Thai Curry »

A deliciously simple evening meal. Serve with Thai Jasmine rice.

Serves: 4

Preparation Time:
5 minutes
Cooking Time: 15 minutes

Ingredients:

  • 500g diced chicken breast
  • 1 can of coconut milk (400ml)
  • 1 jar Very Lazy Red Thai cooking concentrate

 

Method:

  1. Heat a little oil in a large pan or wok and add the chicken, stir fry for 3-4 minutes until cooked.
  2. Add  a jar of Very Lazy Red Thai Curry concentrate and fry for 2 minutes.
  3. Add coconut milk and stir through.
  4. Bring to a simmer and cook gently for 10 minutes until the chicken is tender.

    Serve with Thai Jasmine rice.
