« Red Thai Curry »
A deliciously simple evening meal. Serve with Thai Jasmine rice.
Serves: 4
Preparation Time:
5 minutes
Cooking Time: 15 minutes
Ingredients:
- 500g diced chicken breast
- 1 can of coconut milk (400ml)
- 1 jar Very Lazy Red Thai cooking concentrate
Method:
- Heat a little oil in a large pan or wok and add the chicken, stir fry for 3-4 minutes until cooked.
- Add a jar of Very Lazy Red Thai Curry concentrate and fry for 2 minutes.
- Add coconut milk and stir through.
- Bring to a simmer and cook gently for 10 minutes until the chicken is tender.
Serve with Thai Jasmine rice.
