A deliciously simple evening meal. Serve with rice.
2 Tbsp Rapeseed Oil
500g Beef Mince
400g Chopped Tomatoes (1 tin)
400g Kidney Beans (1 tin)
50g Tomato Paste
70g Onions (1 small onion)
1 Tbsp Cumin
1 Tsp Very Lazy Chopped Garlic
1 Tsp Very Lazy Chopped Chilli
1/2 Tsp Dried Oregano
1 Tsp Salt
1 Tbsp Sugar
250ml Water
1 Beef stock Cube
1 Tsp Chipotle Chilli (optional, but tasty)
1. In a large frying pan, fry the onion, Very Lazy Garlic, Very Lazy Chilli, beef mince, tomato paste, cumin & salt on a high heat for 5 minutes.
2. Add the chopped tomatoes & kidney beans, stock cube & water.
3. Simmer for 10 minutes.
4. Season with oregano & sugar.
