« Eton Yoghurt Mess
Crushed meringues, raspberries and yoghurt topped with Very Lazy Raspberry Coulis
Ingredients:
- 6 meringue shells
- 8oz raspberries
- 12 oz natural yoghurt
- Very Lazy Raspberry Coulis
- 2tbsp chopped pistachios
Method:
Use tall glasses if possible, if not large martini glasses.
- Put a few raspberries in the bottom, add Very Lazy Raspberry Coulis, yoghurt and crushed meringues.
- Then add the fruit and a dollop more of Very Lazy Raspberry Coulis. Repeat to the top of the glass.
- Finish with raspberries and sprinkle with pistachios. Chill and serve.
