  • 2 Bagels
  • 225g of halloumi, sliced into 6
  • 4 rashes of bacon
  • 2 eggs
  • 1 tsp butter
  • Fresh coriander to garnish

Bacon & Halloumi Bagel

Cooking Steps

    Begin by lightly smashing your avocado with the Very Lazy chopped garlic, Very Lazy chopped red chillies, lemon juice, olive oil, salt and pepper - then place to one side.

    Slice your bagels in half so you have a 'top' and 'base' slice. Toast you base slice either under the grill or in a toaster. Slice a hole large enough to fit an egg in the top half. Place both to one side.

    Fry 4 rashes of bacon over medium heat until nice and crispy, and fry the halloumi in the bacon fat until golden on both sides.

    Keep heat on a medium and melt 1 tsp butter in the pan. Place the top half of the bagel in the pan and crack an egg in the centre. Season with a pinch of salt and pepper. Leave to fry for a few mins until the egg begins turning white, then pop under the grill to cook for a further 2-3 minutes.

    Stack in this order: base bagel, smashed avo, bacon, halloumi, top bagel with egg. Garnish with a sprinkle of finely chopped fresh coriander.
