Cooking Steps

    Preheat to the oven at 180 degrees.

    In a small bowl add the red onion and red wine vinegar and sugar. This will start the pickling process.

    Start by frying the chorizo pieces in a hot pan for a couple of minutes. Be careful not to burn the chorizo, we just want to get those flavoured into the oil.

    Remove the chorizo from the pan and set aside for now. Next add the black beans to the pan and allow to cook until the onions have softened. Then add your Very Lazy Smoked Garlic and Red Chillies and cook for another minute. Return the chorizo to the pan

    Next beat together the eggs and milk. Season with salt and pepper and add to the pan.

    As the egg cooks, warm your tortillas in the oven for a few minutes.

    Mix the egg through the mixture, creating a scrambled egg effect.

    Remove tortillas from the oven and begin to assemble your tortillas. Slice your avocado however you prefer it. Chop your spring onions finely. Lay the tortillas out, adding the egg mixture to the middle. Place the avocado on top. Take the red onions out of the pickle mixture and put these in the wrap too. Finish off with a sprinkling of spring onions and black pepper.
