Cajun Drums with Sticky Pineapple wedges

Ingredients:

  • 8 chicken drumsticks
  • 2 tbsp Very Lazy Cajun Paste
  • 3 tbsp olive oil (2 for chicken, 1 for pineapple)
  • 1 small pineapple, cut into wedges, with skin removed
  • 3 tbsp light brown sugar
  • 450g French fries

To Serve:

  • Handful of coriander, roughly torn

Cooking Steps

    Pre-heat the oven to 200C/180C fan/gas 6 and line 2 large baking trays with baking paper.

    Mix your Very Lazy Cajun Paste with 2 tbsp of olive oil and a generous pinch of salt and pepper in a large mixing bowl. Throw your drumsticks into the bowl and use your hands to mix, so that all your drumsticks are covered in your Cajun coating.

    Lay your fully coated drums on your baking tray and pop in the oven for 25 mins! Lay your fries on a baking tray and cook as per package instructions!

    While you wait, it's time to make your sticky pineapple wedges. Sprinkle your wedges evenly all over with brown sugar and heat a tbsp of olive oil in a large, non-stick pan over a medium-high heat.

    Throw your pineapple into the pan and cook for 2 mins each side until caramelised. Give a shimmy every now and then to stop your pineapple sticking!

    Remove your drums from the oven, load onto a sharing plate muddled with your sticky pineapple and finish with torn coriander. Remove your fries, season and tuck into the perfect Friday night fakeaway!
