Cooking Steps

    Heat 2 tbsp of oil over a medium heat and fry the onions softly for 8-10 mins, until soft and translucent without colour. Then add the Smoked Garlic and Chilli and cook for 2 mins.

    Add the grated courgette and cook for 1 minute.

    Add the vinegar, sugar & tins of tomatoes to the pan and bring to the boil. Then turn the heat down and gently simmer for about 10 minutes.

    When the sauce is cooking heat the remaining oil in a non-stick frying pan, season the chicken with salt and pepper and fry for 10 minutes until lightly golden brown and fully cooked.

    Pre heat an Oven on 210C/200C Fan/Gas 7. Cook the Pasta as per the packet instruction and drain, roll a little oil around the pasta to stop it sticking together.

    Finish the sauce with the double cream, and season to taste. Add the chicken & pasta. Mix well and pour into an oven proof dish, sprinkle the cheese on top and bake for 15 – 20 mins or until the cheese is golden brown.
