In a small saucepan, combine water, sugar, and Very Lazy Ginger Paste. Bring to a boil until sugar dissolves. Remove from heat then cover with lid and let steep for 10 mins. Store syrup in fridge until ready to use (it keeps in the fridge for 2 weeks for future cocktail making antics too!)

In a tall glass, muddle mint leaves with ginger syrup. Add gin, lime juice, ginger beer, and a couple of dashes of lime bitters. Stir together. Add in ice and garnish with lime wedges and additional mint leaves.
