Heat the oil in a large non-stick frying pan over a high heat. Pat the salmon dry, season and add to the pan and sear all over for around 4 minutes. Remove from the pan and set aside.

In the same pan add the onion and cook until soft, roughly 8-10 minutes. Add the garlic and cook for a few minutes longer then add the smokey chilli boost, tomatoes, water, and simmer for 5 minutes. Add the cream (reserve a tbsp) and sun-dried tomatoes and simmer for a further 3 minutes.

Add the salmon back into the pan and cook for another 3 minutes or so, top with parsley, a drizzle of smoky chilli boost & single cream!
