Butterfly the chicken breasts to an even thickness, combine in a bowl with salt and pepper and veg oil.

Heat a large frying pan or griddle pan over a high heat and cook the chicken for 2-3 minutes each side until cooked through, transfer to a clean bowl and add the mayonnaise and zingy boost and mix well.

Transfer to a chopping board and cut into even bite size pieces that will fill the lettuce cups.

Assemble the chicken into the lettuce cups and top with the pickled onion, cucumber, radish, and spring onion!
