Bacon, Onion and Cheddar Stuffed Jacket

Serves 4 5 mins Prep 1 hour 15 mins Cooking

Ingredients:

  • 4 baking potatoes
  • 2 tbsp olive oil
  • 2 tbsp milk
  • 2 tbsp butter
  • 4 bacon rashers, cut into 1cm dice
  • 2 white onions, peeled and thinly sliced
  • 1 tsp Very Lazy Chopped Garlic
  • 125g cheddar cheese, grated
  • 2 tbsp crème fraîche or soured cream
  • 2 tbsp chopped parsley

Cooking Steps

    Preheat the oven to 220C/200Cfan/Gas 7. Rub the potatoes with olive oil and seasoning and bake for about an hour, until soft all the way though.

    Place a non-stick frying pan on a medium heat. Add some oil and fry the onion slices for 10–15 mins, until just starting to caramelize. Add the bacon, garlic & seasoning to the pan and fry for 6-8 mins, then set aside.

    Slice each potato in half, scoop the filling into a bowl and mix with the milk, butter, crème fraîche, parsley, ¾ of the cheese and the onion and bacon mix . Then scoop the mixture back into the skins and place in a roasting tray, drizzle with oil and sprinkle with the remaining cheese. Pop back into the oven for 15 minutes, until golden and crispy.
