Heat 2 tbsp of oil in a sauce pan over a medium heat and add the chopped onion for 10 mins, until soft and starting to brown. Add the Very Lazy Garlic and Very Lazy Ginger and cook for 1 more min.

Turn the heat down to low and add the cumin, curry powder , garam masala, smoked paprika, and Very Lazy Chopped Chilli and tomato puree. Cook for 2 mins until fragrant.

Add the chopped tomatoes, chickpeas & coconut milk. Cook for 10–15 mins.

Season the curry and baby spinach and cook for another 2 mins

Finish with coriander and crispy onions. Serve with naan bread and cooked rice. Enjoy!
