Heat a little oil in a pan and remove the sausages from the skin, add to the pan breaking up the sausages with a wooden spoon.

Season with salt and pepper and add the chopped shallots. Cook for 1-2 mins before adding the chopped garlic and red chopped chillies, cook for a further 2-3 mins.

Pour in the passata, veg stock and double cream. Let this bubble away for 10 mins.

Stir in the gnocchi, parsley and grated mozzarella. Keep stirring until it’s all fully combined, simmer for 2-3 mins.

Transfer to an oven proof dish (it’ll be quite saucy which is fine as the gnocchi absorbs a lot of it) top with slices of mozzarella.

Bake in the oven at 200C for 25-30mins (check half way through).

Garnish with fresh parsley - enjoy!
