Preheat oven to 200°C

Place the butternut squash on a baking tray. Drizzle with olive oil and season with salt and pepper. Place in the oven for 20-25 minutes or until golden and cooked through.

In a large frying pan. Add a little olive oil and add the onion, once softened add the smoked garlic paste, cook for 2 minutes then add the stock. Bring to a simmer then add the orzo, stir well quite regularly until the orzo starts to plump up and take on the stock. Once just cooked, approximately 8 minutes into adding the orzo to the pan, add in the cream and half the cheese, cook for another 2 minutes stirring frequently until well incorporated.

Mix through the butternut squash and parsley and season to taste. Serve into bowls and scatter over the reaming hard cheese!
