Bacon, Cheddar & Onion Stuffed Jackets

Ingredients:

  • 4 large baking potatoes
  • 2 tbsp olive oil
  • 2 tbsp milk
  • Knob of butter
  • 4 bacon rashers, cut into 1cm dice
  • 2 white onions, thinly sliced
  • 1 tsp of Very Lazy Chopped Garlic
  • 125g cheddar cheese, diced or grated
  • 2 tbsp crème fraiche or sour cream
  • Handful of chopped parsley

Cooking Steps

    Preheat the oven to 220C/200Cfan/Gas 7. Rub the potatoes with the olive oil and seasoning. Bake for about an hour or until soft all the way though.

    Place a non-stick frying pan on a medium heat. Add some oil and fry the onion slices for 10–15 mins, until just starting to caramelize. Then add the bacon, garlic & seasoning to the pan and fry for 6-8 mins and set aside.

    Slice each jacket potato in half and scoop the soft potato into a bowl. Mix it with the milk, butter, crème fraiche, parsley, the bacon and onion mix and ¾ of the cheese.

    Scoop the mixture back into the skins and place in a roasting tray, drizzle with oil and sprinkle with the remaining cheese. Pop back into the oven for 15 minutes or until golden and crispy.
