Cajun-Cauli Pasta Bake

Serves 4 15 mins Prep 30 mins Cooking

Ingredients:

  • Small cauliflower heads cut into florets
  • 300g penne
  • 1 tbsp vegetable oil
  • 1 white onion cut into wedges
  • 1 red pepper sliced
  • 150g sundried tomatoes roughly chopped
  • 1 small tin sweetcorn, drained

For the cheese sauce:

  • 2 tbsp flour
  • 50g butter
  • 500ml milk
  • 3 tbsp Very Lazy Cajun Paste
  • 300g extra mature cheddar grated (225g for sauce and 75g to sprinkle on top)

Cooking Steps

    Whack up your oven to 200C/180C fan/gas 6 and bring a large, deep pan of salted water to the boil. Pop in your cauli and cook for five mins before removing with a slotted spoon and popping in a colander.

    Bring your water back to the boil, add your pasta and cook for 10-12 mins until al-dente.

    Whilst you wait for your pasta to cook heat your oil in a non-stick frying pan, add your onion and cook for a few mins before tipping in your pepper, sundried tomatoes, sweetcorn and seasoning and fry for another few mins stirring as you go.

    Add your cauli, give another shimmy, stir through your pasta (drained) and pop to one side, off the heat so that you can crack on with your wow-factor cheese sauce.

    It's time to get cheffy! Add your flour and butter to a medium, non-stick pan over a medium heat and use a whisk to combine and create a roux. Reduce to a medium-low heat and whisk in your milk bit by bit to create a creamy sauce (this may take 5-10 mins).

    Time to load in the good stuff! Add your Very Lazy Cajun Paste, followed by your cheese (keep aside 75g of Cheddar to top), seasoning and heat gently until melted, oozy and combined. Add a little more milk to loosen if needed.

    Add your pasta, veg and cheese sauce to an ovenproof dish and give a mix before topping with leftover Cheddar and popping in the oven for 15 mins until bubbling and golden.

    Remove from the oven and serve up a hearty serving of Cajun comfort food at it's absolute finest!
