Add egg yolks to grated parmesan (keep a little to sprinkle on at the end) and a healthy grind of black pepper. Whisk everything together and set aside.

Chop the smoked bacon into little pieces, and add to a frying pan.

As the bacon browns, add spaghetti to a pan of boiling water with a big pinch of salt

Once the bacon is crisp, add the Very Lazy Chopped Garlic and cook together for a couple of minutes. If the garlic or bacon looks like it is sticking to the pan, add small spoons of the starchy pasta water.

When the pasta is 1 minute before being ready – take out 5 or 6 ladles of the pasta water and pour it into a bowl to use later.

Drain the pasta, and then pour it into the pan with the bacon and the garlic. Add a couple ladles of the pasta water, and cook everything together over a medium heat. Once the water has evaporated and the pasta is nice and silky, take it off the heat.

Allow to cool down for 1 minute, and then add the egg and parmesan mixture, and another ladle of the water and mix it all together. If it looks too thick, add a bit more water. You want it to be a silky smooth texture!

Serve with a sprinkling of the parmesan and top it off with more ground black pepper!
