Heat a griddle pan or bbq to its highest setting.

Halve & quarter the avocados, removing the stone and skin.

In a bowl, toss the avocado with 1/2 the olive oil and a generous pinch of salt and pepper.

Add the avocado to the griddle pan and cook on each side for a minute or so until strong bar lines form!

In another bowl add the smoky boost, remaining oil and runny honey and whisk well. Add the prawns, mango, red onion, and mint, gently mix then add the mixed leaf salad and gently mix.

Top the smokey salad mix over the charred avocado!
