Charred Avocado & Smokey Chilli Prawn Salsa

Serves 2 10 mins Prep 5 mins Cooking

Ingredients:

  • 2 large ripe avocados
  • 2 tbsps olive oil
  • 150g cooked king prawns, roughly chopped
  • 1/2 mango, peeled & diced
  • 1/2 red onion, sliced thinly
  • Few sprigs of mint, roughly chopped
  • 1/2 tbsp Very Lazy Smokey Chilli Boost
  • 1 tbsp runny honey
  • Mixed leaf salad bag
  • Salt & pepper

Charred Avocado & Smokey Chilli Prawn Salsa

Cooking Steps

    Heat a griddle pan or bbq to its highest setting.

    Halve & quarter the avocados, removing the stone and skin.

  • 3

    In a bowl, toss the avocado with 1/2 the olive oil and a generous pinch of salt and pepper.

    Add the avocado to the griddle pan and cook on each side for a minute or so until strong bar lines form!

    In another bowl add the smoky boost, remaining oil and runny honey and whisk well. Add the prawns, mango, red onion, and mint, gently mix then add the mixed leaf salad and gently mix.

    Top the smokey salad mix over the charred avocado!
