Cheesy Cajun Nachos

Ingredients:

  • 400g salsa
  • 3 tbsp Very Lazy Cajun Paste
  • 180g salted tortilla chips
  • 400g tin of black beans, drained and rinsed
  • 150g mature cheddar, grated

Optional Extras:

  • Guacamole
  • Sour cream
  • Small handful of coriander

    Pre-heat your oven to 200C/180C fan/gas 6.

    Chuck your salsa and Very Lazy Cajun Paste in a bowl and give a good stir before adding salt and pepper.

    Tip half your tortillas into a large skillet. Top with half your black beans, followed by half of your Cajun salsa and half of your cheese. Layer the rest of your tortillas on top and load with the rest of your toppings. The trick to the double layering is that you get all of the loaded goodness with every bite!

    Place in the oven for 10-15 mins until your cheese is oozing and gooey! Dollop with sour cream and get dipping in guac! You best dive in quick as this sharer will be gone in seconds!
