Per serving:

Place the mince in a large pre-heated non-stick saucepan on a medium heat with 2 tbsp of oil and cook until an even golden brown.

Drain the excess fat off the pan and add the carrot, onion, pepper, chopped garlic & red chillies and cook until soft without colour, 3-5 minutes.

Add the chipotle paste, ground cumin & paprika and turn the heat down until the spices are aromatic.

Add the water, salt, pepper & the tin of tomatoes and bring to a gentle simmer.

Turn the heat to a low/medium setting and let the chilli con carne simmer away for around 20 – 25 minutes, until the sauce has reduced. You want it to be saucy but not watery.

To finish, grate over lime zest & sprinkle on the spring onions.

Serve with white or brown rice, lime wedges & sour cream.
