Cooking Steps

    Fry your onion until soft and lightly browned.

    Add garlic, chilli, cumin, parsley, coriander, sugar and salt. Fry for 5 minutes before adding the smoked paprika, bay leaves, and chopped tomatoes.

    Reduce heat and cook for 10-15 minutes, adding water if needed (it shouldn’t be dry).

    Make small holes in your mixture and crack in the eggs.

    Cover with a lid and cook for 2-4 minutes, checking that your egg-whites look white and cooked through but the yolks should remain soft - they will continue cooking after you take the pan off from the heat.

    Enjoy with extra feta and coriander on top! Grab some sourdough bread and break those runny yolks.
