Blend half of the sweet corn and put the other half to the side.

Mix all the waffle ingredients together in a bowl.

Spoon the mixture into a waffle maker and cook until golden brown.

Meanwhile, for the beans, fry the red onion until soft and lightly caramelised.

Mix in the rest of the ingredients. Let it reduce until the mixture thickens and most of the liquid is absorbed.

Serve over the waffles with a poached egg, avocado and chopped chives.
