Hoppin’ John Rice

Serves 10 mins Prep 35 mins Cooking

Ingredients:

  • 1 tbsp vegetable oil
  • 310g pancetta cubes/smoked diced bacon
  • 1 tbsp Very Lazy Chopped Garlic
  • 1 red onion, roughly chopped
  • 2 celery sticks, roughly chopped
  • 1 red pepper, roughly chopped
  • 250g long grain rice
  • 1 jar Very Lazy Cajun Paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • 400g tinned black beans, drained

To serve: (optional)

  • Finely sliced chillis
  • Finely sliced spring onions

Cooking Steps

    Start by heating your oil in a large, non-stick, deep pan over a medium-high heat and add your pancetta/smoked bacon. Heat, stirring as you go for 10 mins until crispy before removing from the pan and laying on kitchen roll to one side. Do not remove any oil from the pan.

    Time to get frying dirty-style! Add your Very Lazy Garlic, onion and celery to the pan, stirring to coat in the pancetta fat and cooking for 3 mins until beginning to soften. Add your red pepper and cook for a further few mins.

    Add your rice, 700ml of water, Very Lazy Cajun Paste, thyme and bay leaves. Give a good stir, season with salt and pepper and cover, simmer for 10 mins.

    Add your drained beans and pancetta/smoked bacon back to the pan and simmer away for a further 10 mins, giving a stir every now and then to stop sticking! Add a little more water if needed!

    Serve straight from the pan and sprinkle with chillis and spring onions for an ultimate southern comfort food fave, ready in only 40 mins.
