Jerk Beans & Fried Egg on Sourdough

Serves 2 10 mins Prep 25 mins Cooking

Ingredients:

  • 1/2 jar Very Lazy Jerk Paste
  • 65g pancetta
  • Olive oil
  • 400g tin haricot beans, drained
  • 400g tin black beans, drained
  • 400g tin chopped tomatoes
  • 1 small red onion, finely diced
  • 250g medium sized sweet potato, cut into bitesize chunks
  • 1 tbsp brown sugar
  • 2 medium eggs
  • Salt & pepper
  • 4 slices sourdough bread
  • Butter for toast (optional)
  • Coriander (optional)

Jerk Beans & Fried Egg on Sourdough

Cooking Steps

    Over a medium heat, in a non-stick saucepan, add the olive oil, pancetta (optional), onion, sweet potato and a pinch of salt. Cook for 10 minutes until the onion is soft and the sweet potato starts to become tender and the pancetta is slightly crisp.

    Add the jerk paste and cook for a couple of minutes, add the tomato, 200ml water, beans, brown sugar and mix well. Bring just to a boil then simmer for 10-15 minutes.

    In a large frying pan add some more oil, crack in the eggs, fry to your liking and season.

    Toast and butter the sourdough bread, spoon the beans on and place the fried egg on top.

    Garnish with coriander for a pop of colour and additional flavour!
