In a frying pan add 1 tbsp butter and oil, then melt over a medium high heat add the onion wedges and pepper.

Cook until the onion is soft and starting to caramelise.

Add the prawns and fry over a high heat for 1 minute turning a couple of times in the pan.

Add in the jerk paste, fry for 2 minutes add the remaining butter and baste the prawns for a further minute.

In a bowl top the prawns over the rice, top with mango and some torn coriander leaves.
