Jerk Butter Prawns & Mango

Serves 2 10 mins Prep 10 mins Cooking

Ingredients:

  • 1/2 jar Very Lazy Jerk Paste
  • 165 raw king prawns
  • 1 yellow pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 tbsp oil
  • 1 1/2 tbsp unsalted butter
  • 1/2 fresh mango, cut into chunks
  • Handful coriander (optional)
  • Coconut rice or plain rice, to serve

Jerk Butter Prawns & Mango

Cooking Steps

    In a frying pan add 1 tbsp butter and oil, then melt over a medium high heat add the onion wedges and pepper.

    Cook until the onion is soft and starting to caramelise.

    Add the prawns and fry over a high heat for 1 minute turning a couple of times in the pan.

  • 4

    Add in the jerk paste, fry for 2 minutes add the remaining butter and baste the prawns for a further minute.

  • 5

    In a bowl top the prawns over the rice, top with mango and some torn coriander leaves.
