Loaded waffles

  • 8 boneless, skinless chicken thighs
  • Vegetable Oil, for deep frying
  • Maple syrup
  • 2 Bacon rashers
  • Shop-bought waffles

For the buttermilk brine:

For the Seasoned Flour Crust:

  • 384g all-purpose flour
  • 43 g cornstarch
  • 2 tsp baking powder
  • 2 tsp onion powder
  • 2 tsp salt
  • 2 tsp freshly cracked black pepper

Cooking Steps

    Combine all ingredients for the brine and let chicken breasts marinate for a minimum of 4 hours (but best overnight).

    When the chicken is marinated, combine all the flour crust ingredients and put your oil on to heat up.

    Dip the chicken into the crust mix to coat thoroughly. Once coated, place in the sizzling oil and fry for 6 - 8 minutes until the coating is golden and chicken is cooked through.

    As the chicken cooks put a pan on heat for the bacon. Fry the bacon to your liking.

    Once the chicken and bacon is cooked, stack these on top of your waffles and douse in maple syrup.
