Louisiana’s Best Sloppy Joes

Serves 6 10 mins Prep 30 mins Cooking

Ingredients:

  • 3 tbsp olive oil
  • 1 red onion, diced
  • 500g beef mince
  • 3 tbsp Very Lazy Cajun Paste
  • 1 jar roasted mixed peppers, drained and roughly chopped
  • 400g tinned chopped tomatoes

To Serve:

  • 4 soft white rolls, sliced in half
  • Red onion slices

Cooking Steps

    Pre-heat your oven to 200C/180C fan/gas 6 and line a baking tray with baking paper.

    Start by heating 1 tbsp of oil in a large, deep, non-stick pan over a medium heat. Add your onions and cook for 3 mins, stirring as you go until softened.

    Remove from the pan and pop on a plate to one side. Add another couple of tbsps of oil to your pan and use your hands to crumble in your mince. Cook for 10 mins until evenly browned and becoming crispy. Drain any cooking juices if needed.

    Add your onions back to the pan along with Very Lazy Cajun Paste and give a good stir so that all of your mince is coated. Throw in your peppers and tomatoes, plus a big pinch of salt and pepper and give a stir, before simmering for 10 mins.

    Pop your fluffy buns on your lined tray and pile a ladle full of mince into each roll. Don't worry if the filling spills out - the messier the better! Top each with a cheese slice and pop in the oven for 3-5 mins until melted and oozing.

    Serve with napkins, no need for a plate with this old-school camping fave! Why not pop any leftovers in the fridge to create a super quick, Cajun spag bol later in the week!?
