Pasta Salad

Serves 2 5 mins Prep 10 mins Cooking

Ingredients:

  • 300g farfalle (pasta bows)
  • 200g frozen peas
  • 1 large tomato
  • 10 sundried tomatoes in oil
  • 2 tbsp olive oil
  • 2 tsp white wine vinegar
  • 1 tsp of Very Lazy Chopped Garlic
  • 1 large handful of fresh basil leaves
  • 85g of prosciutto ham

Cooking Steps

    Boil the pasta in salted water for about 8 minutes then add the peas, boil for a further two minutes until they're tender. Drain in a colander and run under cold water.

    Make the dressing by halving the tomato and then putting it into a food processor, with half of the sundried tomatoes, the olive oil, garlic and basil leaves, salt and pepper. Whizz together until smooth.

    Toss together the pasta, peas and sauce, along with the remaining sundried tomatoes and tear in the prosciutto ham. Finish by topping the salad with a couple of basil leaves and enjoy.
