Heat oven to 200C/180C fan/ Gas 5.

Put all the root veg, sweet potato, butternut squash and red onion onto a large baking tray. Season with salt and pepper and drizzle with a little oil, giving it an even coating. Roast for 30 mins or until all the vegetables are tender.

Mix the ingredients together to make your dressing.

Pull out the baking tray and drizzle the dressing over the veggies and give it a gentle mix, then roast back in the oven for 15 mins.

Remove the tray from the oven and add the feta. Place the tray back in the oven for the final 5 mins, until it all is slightly sticky and caramelized and the feta has warmed though.

Allow to cool slightly and serve.
