Smokey Chilli & Crunchy Chicken Thigh Bake

Ingredients:

  • 2 tbsp Very Lazy Smokey Boost
  • 50g full fat mayonnaise
  • 1kg chicken thighs, skin on, bone in
  • 100g plain tortilla chips, broken up slightly
  • 1 red onion cut into wedges
  • 1 lime, zest and juice
  • Handful of coriander, roughly chopped
  • 50g frozen sweetcorn or cut fresh off the corn
  • 200g feta cheese, crumbled

Cooking Steps

    Preheat oven to 210C.

    Mix the mayonnaise, 1 and ½ tbsp. of smokey boost and the lime zest with ½ the lime juice.

    Place the chicken on a sheet pan and pat the top dry using a paper towel. Season with salt. Spoon out about ⅓ of the mayonnaise mixture and use it to spread an even layer on top of the chicken. You should have a smooth even coating. Roast for 10 minutes.

    Toss the remaining mayonnaise mixture with the sweetcorn and onion wedges, then lightly season with salt.

    Remove the chicken from the oven and transfer the corn and onions to the sheet pan, nestling around the chicken. Return to the oven and roast for another 15 minutes, until the chicken is just cooked. Remove the chicken tray from the oven and crumble over the feta and the tortilla chips over and around the chicken, mix with the veg then add back to the oven for 8 minutes.

    Remove from the oven, top with coriander and drizzle over the remaining smoky boost!
