Preheat oven to 200C.

Parboil the new potatoes in a pan of salted water until fork tender.

Season the chicken thighs all over. In a wide oven-proof casserole dish add some olive oil and over a medium to high heat, add the chicken thighs skin down. Evenly colour, then turn over and seal the other side.

Remove from the pan, add in the diced white onion and cook for 8-10 minutes until golden.

Add in the Very Lazy Smoked Garlic Paste and cook for a couple more minutes. Then add in the chorizo and new potatoes for a couple more minutes until slightly golden.

Add the stock, lemon juice and zest to the pan, just bringing to the bubble. Then add in the chicken thighs with skin side facing upwards so they sit above the liquid.

Place in the oven for 15 minutes, then top with the hard cheese (if adding for cheesy goodness) and return to the oven for another 10 minutes.

Check the chicken is fully cooked then serve!
