Cooking Steps

    Get a large frying pan (with a lid) on a medium-high heat. Add some olive oil followed by the onion & peppers, a few pinches of salt and pepper and cook for 10-15 minutes, until softened and caramelised, stirring frequently.

    Add ½ the smokey chilli boost and garlic paste and cook for 1 minute. Then add the tomatoes and water, stir well and bring to a simmer. Cook for a few minutes and once you have a good, slightly thick consistency make 4 wells and carefully crack each egg into a well. Season lightly then place the lid on and cook for 5 minutes over a low to medium heat.

    Warm the tortillas then load the poached eggs once cooked to your liking on top of the tortillas. Add some grated cheddar and salsa and enjoy!
