Squash Curry

Serves 4 5 mins Prep 35 mins Cooking

Vegan

Ingredients:

  • 2 tbsp olive oil, divided
  • 1 small butternut squash, chopped
  • 2 large carrots, chopped
  • 2 tsp of Very Lazy Chopped Garlic
  • 1 tbsp Very Lazy Ginger Paste
  • 1 cup vegetable stock
  • 1 can (400ml) canned coconut milk
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 1 tsp salt
  • 1 can chickpeas, drained
  • 2 cups spinach, chopped
  • Chopped coriander

Squash Curry

Cooking Steps

    Stick all your ingredients in a large saucepan!

    Bring to the boil and simmer for 30-40 minutes (or until the squash is soft).

    Curry complete! Just serve with rice or warm naan bread. We told you it was easy!
