Cornflake Crusted Fish and Chips

Ingredients:

  • 450g of cod (or chicken breast if you prefer!)
  • 230g of cornflakes (bashed into crumbs)
  • 60g of seasoned breadcrumbs
  • 1 tsp of Very Lazy Chopped Garlic
  • 1 tsp of paprika
  • 1/2 tsp of onion powder
  • 1 tbsp of fresh parsley
  • 1/2 tsp of kosher salt (or regular salt)
  • 1/4 tsp of pepper
  • 2 large egg whites
  • Cooking spray
  • Lemon wedge

Cooking Steps

    Preheat the oven to 200ÂșC.

    Divide the fish into 4 even pieces.

    Bash your cornflakes in the bag with a rolling pin, then add the crumbs to a wide bowl with spices, breadcrumbs and mix.

    Beat the egg whites in a separate bowl and dip each piece of fish into the egg and then into the crumb mixture to coat. Repeat for each piece of fish.

    Use non-stick cooking spray to coat a baking sheet and place the fish on the sheet and bake for 8-10 minutes, until done. Serve with lemon wedge.
