Zingy Prawn Mac & Cheese

  • 290g macaroni pasta
  • 50g butter
  • 50g flour
  • 800ml milk
  • 300g grated cheddar cheese
  • 30g grated mozzarella
  • 3 tbsp Zingy Chilli Boost
  • 330g raw king prawns
  • 2 spring onions, finely sliced
  • 30g panko breadcrumbs

Cooking Steps

    Cook the pasta as per pack instructions – reserve some pasta water for later.

    Pre-heat oven to 190C.

    Over a medium heat melt the butter in a pan, add the flour and cook for 2-3 minutes stirring constantly. Gradually add the milk, stirring well. Once all the milk has been added keep stirring, bring just to the boil, lower the heat and cook for 3-4 minutes until thick and glossy.

    Add the raw prawns and spring onion along with the grated cheeses to the pan and cook gently until the cheese is just melted. Add the cooked and drained pasta, then add the Zingy Chilli Boost. Stir together until all the pasta is coated with the cheese sauce. You want the sauce creamy, but just a little looser than you think, add more pasta water if you need to.

    Pour the macaroni mix into an oven dish.

    Top evenly with the panko breadcrumbs and bake for around 25-30 minutes until golden on top and bubbling!
